Eggless Chocolate Cupcakes with Buttercream Frosting

For those of you who have an egg allergy, this is the cupcake for you.  I have a little girl that I watch and is allergic to eggs and peanuts.  She has never had a cupcake before because of her severe allergies.  Well I found this recipe and have made some slight changes and topped with Buttercream frosting that I have also been playing with the recipe.  She was so excited and I was surprised as to how good these cupcakes did taste!  Simple ingredients including:

  • 4 1/2 Cups Flour
  • 3 Cups White Sugar
  • 1 Cup Unsweetened Cocoa Powder
  • 1 Cup Vegetable Oil
  • 3 Cups Water
  • 3 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 3 Tablespoons Vanilla Extract

Basically mix all the dry and then add the wet and mix thoroughly.  Bake at 350 degrees for about 20 minutes.  This will make about 3 1/2 dozen cupcakes.

Then I topped it with my Buttercream frosting! And this is how it turned out!
