A Resource for Moms
This is my simple & quick version! Toast an English Muffin, top with a tablespoon of mozzarella cheese and then load up with chopped up tomatoes. Finish it off with some Italian seasoning.
I was able to pick some roma tomatoes fresh from my garden right before lunch, so it was perfect and so yummy! I used low fat mozzarella and a low fat English Muffin so it was healthy, low fat and so delicious for me.
Now to find other uses, other than the normal, for my tomatoes!
